The Pantry Challenge, day 4

Tonight we had BBQ meatballs, corn, and leftover Italian Style Biscuits. (I've been told my biscuits are akin to Red Lobster biscuits!). Emily had rice cereal and homemade squash.



Recipes:
BBQ Meatballs
1 lb ground meat
2 t dry chopped onion
1/4 C evaporated milk
1/6 t garlic powder
1/3 C oatmeal
2/3 t salt
1/3 C (11) saltine cracker crumbs
1/6 t pepper
1 egg white
2/3 t chili powder

Combine all ingredients; mixture will be soft. Shape into 2 T-sized balls for dinner; 1 T-sized for appetizers.

Sauce:
1 C ketchup
1/4 t liquid smoke
1/2 C brown sugar
1 1/2 T dry chopped onion
1/4 t garlic powder

Combine and stir until sugar dissolves.

To cook: Place meatballs in 8x8 pan. Pour on sauce. Bake at 350° for 20-30 minutes until bubbly.

Makes 20 large or 35 small


Italian Style Biscuits
1 C bisquick
1/2 C shredded cheddar cheese
1/4 C cold water

2 t butter, melted
1/4 t dried parsley
1/8 t garlic powder
1/8 t Italian seasoning

In a small bowl, combine the bisquick and cheese. Stir in water until a soft dough forms; stir 30 seconds more. Drop dough into six mounds 2 inches apart on a greased baking sheet. Bake at 450E for 8-10 minutes or until golden brown.

In a small bowl, combine the butter, parsley, garlic powder and Italian seasoning. Brush over warm biscuits. Serve warm. Makes 6.
